Why? It's a perfectly descriptive phrase of what it is. "Trade": an occupation requiring manual or mechanical skill. "Fair": an exposition that promotes the availability of services or opportunities. It is a fair about a trade, so "trade fair" is a perfectly appropriate name for it.
